Nach den drei Hauptspeisen bieten wir euch heute ein Gericht an, das ihr als Vor- oder auch als leichte Hauptspeise servieren könnt. Bitte unbedingt auf die Qualität beim Spargeleinkauf achten, lieber bei den Standeln neben der Strasse einkaufen, als im Supermarkt…
Zutaten (als Vorspeise oder Zwischengang):
3 Spargel pro Person (6 Stück als Hauptgang): Wir verwenden für dieses Spargelgericht nur die vordere Hälfte des Spargels.
Tomaten
Schalotten
Dijon Senf
Öl
Essig
Schnittlauch
Zucker, Salz, Pfeffer aus der Mühle
1, Spargel gut schälen und ca. 5-6 Minuten kochen, das Kochwasser reichlich salzen und zuckern. Der Spargel muss noch Biss haben! Auskühlen lassen.
2, Vinaigrette: Schalotten in feine Würfel schneiden; Öl, Essig, Zucker, Salz, Pfeffer und Senf verrühren und die Schalotten dazugeben, durchrühren. Tomaten oben und unten kreuzförmig einritzen, mit heißem Wasser überbrühen und anschließend schälen. Die gehäuteten Tomaten entkernen und in kleine Würfel schneiden. Zur Vinaigrette dazugeben.
3, Spargel anrichten und mit dem Dressing beträufeln.
