Flexitarische Ernährung. Der neue Trend. Man ist sozusagen ein Teilzeitvegetarier.

Jeder kann es für sich selber entscheiden, es gibt ja für jedes Fleischgericht auch eine entsprechend leckere vegetarische Variante. Ein Rezept für Chicken Nuggets haben wir in unserem Kochbuch noch nicht, dafür eine sehr schmackhafte marinierte Hendlhaxn Variation. Und wer wiedermal fleischlos genießen möchte, nimmt einen halben Hokkaido  Kürbis und macht daraus die von innen süßlichen und von außen knackigen vegetarischen Nuggets.

Zutaten:

Nuggets

1/2 Hokkaido Kürbis
Semmelbrösel
Mehl
2 Eier
1 Schuss Schlagobers
Salz, Pfeffer aus der Mühle (schwarz)

Sauce tartare (Veggie, ohne Sardellen)

2 Eidotter
Zitronensaft
1 KL Dijon Senf
Öl
2 Essiggurkerl
2 EL Essiggurkerlwasser
Silberzwiebel
Salz, Pfeffer aus der Mühle (schwarz)

Öl und Butter zum Backen
Zitrone und Preiselbeermarmelade zum Servieren

1, Sauce tartare: Die 2 Eidotter in eine kleine Schüssel geben, salzen, pfeffern. 1 KL Dijon Senf und Zitronensaft dazugeben. Mit dem Schneebesen gut rühren, langsam Öl eintröpfeln (eine Küchenhilfe ist jetzt sehr praktisch :)) und fest weiterrühren, bis die Mayonnaise fertig ist. Zwei Essiggurkerl fein würfeln, 2 EL Silberzwiebel fein schneiden, alles in eine andere Schüssel geben, die Mayo dazu und 1 bis 2 EL Essiggurkerlwasser dazumischen. Gut durchmischen und dann kalt stellen!
2, Den Kürbis halbieren, von den Kernen befreien, in gleich große Stücke schneiden und entrinden. Die Stücke leicht mit der Gabel einritzen, damit die Panier besser hält.
3, Die Kürbisstücke in Mehl, dann in der gesalzenen und gepfefferten Mischung aus Ei und Schlagobers und anschließend in den Semmelbrösel wenden.
4, In einer Mischung aus Öl und Butter (Stufe 7 aus 10) goldgelb braten, mehrmals wenden.
5, Mit der Sause tartare, Zitrone, Preiselbeermarmelade und Salat (zum Beispiel Erdäpfelsalat) servieren.
