Strahlend sonniger Nachmittag, Landhaus, zwitschernde Vögel, die Katze putzt sich gemütlich auf der Bank.
Die Oma steht neben dem großen Küchentisch, die kleinen Enkelkinder stehen herum und warten ungeduldig auf die Aktion.
Ein großes, weißes Gefäß steht in der Mitte, es ist zugedeckt mit einem weißen Teller. Wenn man es berührt, spürt man die Wärme.
Was ist hier im Anmarsch?
Die Oma nimmt den Teller ab und legt den Teig auf den Tisch.
Strudelteig selbst ausziehen: das ist die heutige Aufgabe.
Nur die Kinder sind aufgeregt, für die Oma ist es mehr Routine, als Herausforderung.
Ihre Finger arbeiten flink und genau, sie leben fast ihr eigenes Leben: sie rollen den Teig gleichmäßig aus, greifen zur Tischdecke, die schon kräftig mit Mehl bestaubt ist. Mit routinierten Bewegungen laufen die Fingern zwischen der Decke und dem Teig, der immer dünner wird. Es ist ein ruhiger, langsamer Tanz, ohne sich auf die Füße zu treten, ohne zu stolpern, immer im Takt bleibend.
Und es ist soweit! Jetzt sind endlich die Kleinen dran! Jetzt kommt die Füllung: sie löffeln die duftige Topfencreme auf den papierdünnen Teig, dann bestreuen sie alles mit Rosinen.
Die Oma rollt den Teig mit der Hilfe der Decke zusammen.
Nach einer Stunde schaut die Welt fast genauso aus, als in dem Moment, an dem wir unseren Einblick in die Küche geworfen haben:

Zutaten:

Strudelteig (selbstgemachter oder Fertigprodukt, in diesem Fall das zweitgenannte)
1/2 kg Topfen
15 dag Staubzucker
3 Eidotter
3 Eiklar
1/8 l warme Milch
Orangen- und Zitronenzesten
ein Schuss Rum
1 Vanilleschote
10 dag Rosinen

1. Den Topfen in eine große Schüssel geben.
2. Alle Zutaten außer Eiweiß dazugeben und gut durchmischen.
3. Zum Schluss das geschlagene Eiweiß unterheben.
4. Die Masse auf den Teig auftragen, den Teig einrollen und bei 180 Grad ca. 30 Minuten backen.

TIPP: Wenn man den Teig in einer Bratform mit Rand backt, geht der Strudel schön hoch und läuft nicht auseinander.
