Ist der Hunger groß, die Zeit aber knapp?

Dann her mit dem Spatzlhobel und mit den Zutaten, die man sowieso immer daheim hat und in 30 Minuten steht ein sättigendes UND – wegen des dazuservierten Gurkensalates – erfrischendes Gericht.

Zutaten:

Spatzln

200 g Mehl
2 Eier
1 Dotter
1/8 l Milch
Salz

zusätzlich:
1/4 Lauch
3 Eier
3 EL Kürbiskernöl
Butter
Öl
Petersilie
Salz, Pfeffer aus der Mühle

Gurkensalat mit Sauerrahmdressing

1 Gurke
3 EL Sauerrahm
Essig
Öl
Salz, Pfeffer aus der Mühle, Zucker

1, Mehl, 2 Eier, Dotter, Milch, Salz zu einem Teig verrühren und 10 Minuten rasten lassen.
2, Salzwasser in einem großen Topf zum Kochen bringen und mit einem Spatzlhobel die Spatzln ins Wasser gleiten lassen, ca. 3 Minuten köcheln, abseihen und auf die Seite stellen.
3, Lauch fein schneiden und in einer großen Pfanne in einer Butter-Öl-Mischung anschwitzen. Die Spatzln dazu, salzen, pfeffern, leicht anrösten. Die 3 Eier und 3 EL Kürbiskernöl verquirlen und ebenfalls zu den Spatzln mischen, bei mittlerer Hitze leicht backen, manchmal wenden.
4, Fein gehackten Petersilie dazu, einmal durchschwenken und auf vorgewärmten Tellern servieren. Zum Schluss noch einen Schuss Kürbiskernöl darüber.
5, Gurkensalat mit Sauerrahmdressing:  Gurken schälen, hobeln. Dressing: 3 EL Sauerrahm, Salz, Pfeffer aus der Mühle, Zucker, Öl, Essig. Wenn möglich Dill, sonst Petersil oder Schnittlauch dazugeben und fertig!
