Tiroler Speckknödel

Untersuchungen von Speiseresten ergaben, dass bereits vor über 3000 Jahren Fleisch oder Obst in eine Teigmasse eingehüllt und gekocht wurden. Die älteste bildliche Darstellung der Knödel befindet sich in einem Fresko aus dem 12. Jahrhundert. Die heutigen Tiroler Knödel werden aus Weizenbrot und etwas Weizenmehl und Speck bereitet. Früher war der Weizenknödel eine Sonntagsspeise. An Wochentagen machte man sie aus Roggen-, Gersten- oder Hafermehl. Nicht nur Speck und Wurst kamen in die Knödel, sondern in bürgerlichen Häusern um 1700 auch Fisch. Auch wer das Knödelrezept kennt, kann sie deshalb noch lange nicht kochen. Man sagt, eine gute Köchin (ein guter Koch) zeige sich beim Knödelkochen.

Eben deshalb fangen wir heute mit dem Tiroler Knödel Rezept an (in der Fastenzeit werden diese Knödel natürlich ohne Fleisch zubereitet, in Butterschmalz herausgebacken und in Salzwasser oder Suppe fertiggekocht, dann nennt man sie Tiroler Fastenknödel).

Zutaten für 4 Personen:

250 g Knödelbrot
1/4 liter Milch
3 Eier
1 Zwiebel
150 g Knödelwurst (Braunschweiger)
150 g Bauernschinken
1 Bund Petersilie
100 g Butter
Salz
Pfeffer (schwarzer, aus der Mühle)

1. Die Milch nicht zu heiss erwärmen und über das Knödelbrot giessen, das sich schon in einer Schüssel befindet.
2. Die drei Eier verquirlen und ebenfalls über das Knödelbrot giessen und alles gut vermischen.
3. Während das Knödelbrot ruht, eine Pfanne überstellen, die Butter auf mittlere Flamme zergehen lassen, die fein gehackte Zwiebel und die in kleine Stücke geschnittene Wurst in der zerlassenen Butter glasig anschwitzen. Ganz zum Schluss ebenso die fein gehackte Petersilie mitrösten.
4. Anschliessend alles mit dem eingeweichten Knödelbrot vermengen, mit Salz und Pfeffer würzen.
5. Alles gut vermengen und 15 Minuten ruhen lassen.
6. Ich verwende bewusst kein Mehl, weil die Knödel dadurch gerne pampig werden.
7. Man nehme einen grossen Topf, fülle ihn zu 2/3 mit Wasser und stelle ihn auf den Herd und bringe das Wasser zum Kochen. Das wasser salzen.
8. In der Zwischenzeit sollten die 15 Minuten vergangen sein.
9. Man befeuchte die Hände und formt aus der Knödelmasse nicht zu grosse Knödel, und lässt sie 20 bis 25 Minuten in wallendem und nicht kochendem Wasser ziehen.
10. Während die Knödel ziehen, bereitet man je nach Saison verschiedene Salate zu. In unserem Fall gibt es Krautsalat, der mit Kümmel und einem Dressing aus Weissweinessig, Öl, Salz, Pfeffer und Zucker angemacht ist. Der Tomatensalat wird kräftig mit Petersilie gewürzt und das Dressing besteht ebenso aus Weissweinessig, Öl, Salz, Pfeffer und Zucker.
11. Jetzt bitte zu Tisch! Der erste Knödel wird mit klarer Rindsuppe gegessen, ab dem zweiten Knödel mit Salat. Am besten schmecken die Tiroler Knödel mit einem kleinen Bier.

Die alte Regel lautet so: Man darf die Knödel nicht mit dem Messer schneiden, sonst schneidet man ihnen die Seele heraus. Es ist besser, wenn das mit den armen Knödeln nicht passiert, also: die Tiroler Spezialitäten lieber mit einer Gabel (oder mit Löffel und Gabel) langsam auseinanderziehen. Warum? Es gibt mehrere Erklärungen. Erstens: die Knödel haben dann keine glatte Schneidefläche und nehmen die Soße leichter an.
