Brokkoli-Karfiol Strudel

Zutaten:

Strudel

2 Blätter Strudelteig
je 150 g Karfiol und Brokkoli
(geputzt, gewogen und zu kleinen Rosen geteilt)
250 g Sauerrahm
2 Dotter
2 EL Petersilie
3 EL glattes Mehl
1 Knoblauchzehe
Oregano
Salz
Pfeffer aus der Mühle (schwarz)

Petersilsauce

125 g Sauerrahm
100 ml Suppe
50 g Petersilie
Salz
Pfeffer aus der Mühle (schwarz)

1. Rohr auf 200 Grad vorheizen (Ober-, Unterhitze), Backblech mit Backpapier belegen.
2. Gemüse in Röschen teilen und jeweils getrennt in Salzwasser bissfest kochen. (Brokkoli ca. 2-3 Minuten, Karfiol ca. 3-4 Minuten.) Dann in Eiswasser abschrecken, damit der Brokkoli schön grün bleibt.
Anschließend die Röschen gut trocknen!! (Sehr wichtig, sonst wird die Füllung zu flüssig)
3. Den Sauerrahm, die 2 Dotter, die 3 EL Mehl mit Salz, Pfeffer, Knoblauch, frisch gehackter Petersilie und Oregano würzen und glatt rühren. Das Gemüse untermengen.
4. Ein Strudelblatt auf ein feuchtes Tuch legen, mit zerlassener Butter bestreichen, das 2. Strudelblatt darauf, ebenfalls mit Butter bestreichen. Die Fülle am unteren Ende auftragen. Die Mischung darf nicht zu dünnflüssig sein, sonst zerrinnt der ganze Strudel.
Die seitlichen Teigränder gut (ca. 3 bis 4 cm) einschlagen, wieder buttern und den Teig eng über die Fülle einrollen.
5. Den Strudel auf das Backblech legen, noch einmal buttern und im Rohr auf der mittleren Schiene 25 Minuten backen.
6. In der Zwischenzeit 100 ml Suppe erwärmen, den Sauerrahm und die Petersilie dazu, salzen, pfeffern, einmal kurz aufkochen und dann in einer Schüssel auskühlen lassen.
7. Den Strudel anschneiden und mit der Sauce servieren.
