Risotto mit getrockneten Tomaten

Zutaten für 2 Personen:

160 g Risotto Reis
4 getrocknete Tomaten
1/2 Zwiebel
1 Knoblauchzehe
1/3 L Suppe
50 g Parmesan
1/8 Weißwein zum Ablöschen
Olivenöl und 10 g Butter
Salz
Pfeffer aus der Mühle (schwarz)

1, Tomaten fein schneiden und in einer Tasse Wasser einweichen, 10 Minuten stehen lassen. Die weichen Tomaten auspressen.
2, Zwiebel und Knoblauch fein schneiden, Tomaten dazu und alles in Olivenöl anschwitzen. Reis dazugeben, ca. 1 Minute gut durchrühren bis der Reis leicht durchsichtig wird. Mit Weißwein ablöschen, ständig rühren, Kehle für Kehle mit heißer Suppe aufgießen. Nach 16 Minuten ist der Reis gar.
3, Von der Flamme ziehen, die Hälfte vom geriebenen Parmesan dazu. Die Butterflocken dazu, einmal durchrühren, Deckel drauf, 2-3 Minuten ziehen lassen und auf vorgewärmten Tellern servieren. Mit restlichem Parmesan und frisch geschnittenen Kräutern  garnieren.
