Es ist schon manchmal vorgekommen und bei vielen Rezepten trifft man immer wieder darauf, dass Rindsuppe bei verschiedenen Gerichten benötigt wird. Es ist praktisch, wenn man eine große Portion Suppe kocht und sie in Joghurtbechern (1 Becher ist genau eine Portion für eine Person) einfriert, so braucht man sie zum gegebenen Zeitpunkt nur herausnehmen und dann kann´s schon losgehen.
Das Rezept stammt vom Willibald Haider Haubenkoch.
Zutaten für 6 Portionen:
1,5 kg Tafelspitz
2 Markknochen
1 Zwiebel
3 große Karotten
1 Sellerie
1 Lauch
1 Bund Petersilie
10 schwarze Pfefferkörner
Salz
4 L Wasser
1. Möchte man ein saftiges Fleisch, legt man das Rindfleisch und die Markknochen in kochendes, leicht gesalztes Wasser.
Möchte man aber eine kräftige Suppe, legt man das Fleisch und die Knochen in kaltes, leicht gesalztes Wasser ein.
2. Ca. anderthalb Stunden langsam, nicht zugedeckt köcheln. Zwischendurch den sich bildenden Schaum abschöpfen.
3. Das geputzte Wurzelgemüse (Zwiebel, Karotten, Sellerie, Lauch, Petersilie) und Salz, Pfeffer zugeben und ca. eine weitere 1/2 Stunde köcheln, bis das Fleisch gar ist. (Karotten machen die Suppe süßlich, zu viel Lauch färbt die Suppe grünlich und man darf nicht vergessen, dass Sellerie einen sehr intensiven Geschmack hat.)
4. Wann weiß man, dass das Fleisch gar ist? Man sticht mit einer Strick- oder Rouladennadel ins Fleisch und wenn sich kaum ein Widerstand feststellen lässt, so ist das Fleisch perfekt.
5. Sollte das Fleisch nicht sofort serviert werden, ist es ratsam, es im kalten Wasser abzuschrecken und darin auskühlen zu lassen, dadurch trocknet das Fleisch nicht aus und es behält die frische Farbe. Die Suppe abschmecken, absieben und servieren.
