Es schaut so aus, dass es funktioniert und die Leute lieben diese Kreationen, weil der englische Heston Blumenthal, der diese Forschungen gestartet hat, in kurzer Zeit drei Michelin Sterne gesammelt hat. Er serviert Gänseleber mit Kamille, Sardinien- oder Senfeis, Tomatenmarmelade mit Kaffee und Pfeffer, oder Zitronentee in Geleeform. Er hat sich auch etwas zum Spaghetti Bolognese ausgedacht: er röstet die Zwiebel mit Sternanis an, daraus entsteht eine chemische Reaktion, demzufolge das Fleisch im Sugo intensiver schmeckt. Er übertreibt es aber manchmal ein bisschen: nach seinem Rezept braucht man 29 Zutaten für Spaghetti Bolognese…
Ich habe nur 10 Zutaten verwendet und glaube, dass das Gericht ohne Sternanis und Gewürznelken auch schmecken kann.
Das Grundrezept ist von meiner Ex-Schwiegermama, Frau Ludmilla Fuchs.
Zutaten:
1 kg Rindsfaschiertes
Öl
3 Zwiebel
2-3 Paradeiser
1 grüner Paprika
2 Tuben Paradeismark
3-4 Knoblauchzehen
Rindsuppe
(frische) Gewürze: Oregano, Basilikum
Salz, Pfeffer aus der Mühle (schwarz)
Nudeln
Parmesan
Petersilie
1. Die fein geschnittenen Zwiebel in Öl anschwitzen.
2. Die geschnittenen Paradeiser dazugeben und zergehen lassen.
3. Die in Würfel geschnittenen Paprika anschwitzen.
4. Das Rindfleisch dazugeben und gut durchrösten, so lange, bis keine Flüssigkeit mehr im Topf ist.
5. Paradeismark dazumischen, 1-2 Minuten durchrösten.
6. Die Mischung mit warmer Rindsuppe aufgießen, durchrühren, auf kleiner Flamme köcheln lassen.
7. Erst jetzt kräftig mit Salz und Pfeffer würzen, Knoblauch zur Paste rühren, Oregano und Basilikum dazugeben.
8. Geduld haben! 2 Stunden lang immer wieder rühren und köcheln lassen, rühren und köcheln lassen…
9. Nudeln bissfest kochen.
10. Mit frisch geriebenem Parmesan und frisch gehackter Petersilie servieren.
11. Man kann das übrig gebliebene Sugo ruhig einfrieren: ein Joghurtbecher ist genau eine Portion.
Tipp:
Es ist praktisch, wenn man eine große Menge kocht, das Sugo schmeckt dann besser. Den Rest kann man in Joghurtbechern (1 Becher ist genau eine Portion für eine Person) einfrieren.
Die fein gehackten und gut verkochten Zwiebeln sind unsichtbar im Sugo. Es ist praktisch, wenn man ein Kind hat, das keine Gerichte isst, in denen Zwiebel ist und trotzdem Spaghetti Bolognese liebt… Ich denke an meine Tochter Gloria 🙂
