Paunzen mit Sauerkraut

Vier Tage Paris. Champagner, Chablis, Chardonnay, Beaujolais, Nouvelle Cuisine, Quiche, Baguette, Croissant, Macaron, Camembert. Alles wunderbar.

Und jetzt freuen wir uns wieder auf eine deftige Tiroler Bauernkost. Ganz nach dem Motto:

„Warum in die Ferne schweifen? Sieh, das Gute liegt so nah.“ (Goethe)

Zutaten für 4 Personen:

Erdäpfelpaunzen

3/4 kg Erdäpfel
250 g Mehl
1 Ei
Salz
Butter
Öl

1, Erdäpfel schälen, in kleine Stücke schneiden und in Salzwasser weich kochen.
2, Erdäpfel passieren, mit dem Mehl, Salz und dem Ei rasch zu einem Teig zusammenkneten.
3, Eine daumendicke Rolle formen, 2-3 cm lange Stücke abschneiden, gut bemehlen.
4, In einer Pfanne eine Butter/Öl Mischung heiß werden lassen und dann die Paunzen sorgsam (also max. 7 aus 10 Hitze) rundherum braun werden lassen.
5, Die fertigen Paunzen abtropfen lassen (auf Küchenrollenpapier).

Sauerkraut

500 g Sauerkraut
1/2 Zwiebel
1 Knoblauchzehe
Suppe
Öl
Lorbeerblatt
Wacholderbeeren
Kümmel
Salz
Pfeffer aus der Mühle (schwarz)

1, Feingeschnittene Zwiebel und Knoblauch in Öl anschwitzen, Sauerkraut dazu.
2, Mit Kümmel, Lorbeer, Wacholderbeeren, Salz und Pfeffer würzen, mit Suppe aufgießen und ca. 30 Minuten leicht köcheln lassen.

Alternativ: Statt Sauerkraut passt auch ein Apfelkompott, das Rezept findet ihr HIER.
