Eine Marinade (fr. marine = Seewesen, konservierte Fische mit Salz eingerieben) ist eine Konservierungsform für Lebensmittel. Sie gibt ihnen ein besonderes Geschmacksbild und sie macht das Nahrungsmittel mürbe, vor allem Fleisch.
Rindfleisch wird zum Beispiel in eine Marinade aus Rotwein, Essig (wegen der Fleischreifung und gegen die Bakterien) und Gewürzen für 2 bis 3 Tage eingelegt, so durchdringt die Marinade das Fleisch bis in die tiefste Fleischfaser. Dabei nimmt das Fleisch eine dunkelviolette Färbung und einen sauren Essiggeschmack an. (1)
Neben Essig eignen sich zum Marinieren/Beizen Butter- und Sauermilch, Zitronensaft, Weißwein, Zwiebeln und Knoblauch, Gewürze wie Pfeffer, Senf, Dill, Koriander, Lorbeer, Majoran, Salbei, Basilikum, Rosmarin oder stark zuckerhaltige Mischungen wie zum Beispiel die, die wir verwendet haben: Eine Soja-Honig Marinade.
Zutaten für 2 Personen:
Hendlhaxn (je nach Hunger)
3 EL Ketchup
3 EL Sojasauce
3 EL Honig
Salz
Pfeffer aus der Mühle (schwarz)
1. Die Hendlhaxn putzen und waschen. (Statt Haxn kann man auch Hühnerflügerl verwenden.)
2. Die Hendlhaxn auf den Bratenrost legen, salzen, pfeffern und in das vorgeheizte Backrohr schieben. Zuerst ca. 20 Minuten bei 200 Grad Ober- und Unterhitzebraten.
TIPP: Das Fleisch verliert relativ viel Fett beim Grillen, also ist es ratsam, ein Backblech mit Wasser unter den Rost zu schieben, sonst verbringt man den Rest des Tages mit Backrohrreinigung.
3. Das Ketchup, die Sojasauce und den Honig verrühren. (Mit Chili kriegt die Marinade einen intensiveren und schärferen Geschmack.)
4. Anschließend die Haxn ca. 15 Minuten bei 180 Grad Oberhitze grillen, mehrmals wenden und mit der Marinade kräftig bestreichen.
5. Mit gekochten Erdäpfeln, mit Salat (Gurken, Paradeisern…) oder mit einer anderen Beilage servieren.
