Kohlrabischnitzel „Wiener Art“ mit Petersilienerdäpfel und Erbsen

Wenn Sonntag Mittag, dann Schnitzel mit Erdäpfelsalat!

Und dass auch die Vegetarier etwas zum Beißen  kriegen, gibt es heute eine fleischlose Möglichkeit: Frisch, geschmackig, Kohlrabi! Genauso gut schmeckt es auch aus Sellerie!

Ihr könnt die Beilagen nach Lust und Laune variieren.

Zutaten:

pro Person 3 Scheiben (ca. 1/2 bis 1 cm dick) Kohlrabi

Panier

Mehl, Eier-Schlagobersmischung (gesalzen, gepfeffert), Semmelbrösel, Öl-Buttermischung zum Backen

Vor dem Panieren die Kohlrabischeiben salzen und pfeffern.

festkochende Erdäpfel
Petersil
Salz
Tiefkühlerbsen
kleines Stück Butter
wenig Suppe
Zitrone
Preiselbeermarmelade

Petersilerdäpfel

Erdäpfel schälen, vierteln und in reichlich Salzwasser ca. 20 Minuten gar kochen. Wasser abgießen, Butter dazu, salzen und die fein gehackte Petersilie dazu (nicht mit Petersilie sparen!).

Erbsen

Tiefkühlerbsen in wenig Suppe und einem Stück Butter ca. 2-3 Minuten köcheln, leicht salzen. Ja, fertig 🙂
