Kombination Kokos-Limette: Saftig, sommerlich, fruchtig und erfrischend. Funktioniert als Eis, Suppe oder Curry. Besonders gut als Kuchen am Sonntag und sorgt hier für eine Geschmacksexplosion! Gut aufpassen und den Teig nicht länger als eine halbe Stunde backen, sonst trocknet er ganz schnell aus.  Die Glasur auf diesen Fotos ist ziemlich dünn, ihr könnt sie aber auch dickflüssiger machen und wenn ihr eine kleinere Springform verwendet, dann schaut die hinunterlaufende Glasur am hohen Rand des Kuchens sehr gut aus!

Zutaten für eine Springform (26 cm):

kokoslimette1

Teig

175 g weiche Butter
Butter zum Einfetten
175 g Backzucker
3 verquirlte Eier
150 g Mehl
1,5 TL Backpulver
75 g Kokosraspel und etwas zum Bestreuen
Saft und abgeriebene Schale von 2 Limetten

Glasur

175 g Puderzucker
Saft und abgeriebene Schale von 2 Limetten

1, Backofen auf 180 Grad vorheizen, die Springform einfetten und mit Backpapier auslegen.
2, Butter und Zucker in einer großen Schüssel cremig rühren. Die Eier dazugeben und gut verrühren. Mehl und Backpulver dazusieben und vorsichtig unterheben. Kokosraspel, Limettenschale und -saft dazu!
3, Den Teig in die Form schütten und glatt streichen. 30 Minuten lang backen.
4, Den Teig auskühlen lassen.
5, Glasur: Puderzucker, Limettenschale und -saft zu einer glatten Masse rühren. Wenn sie viel zu dick ist, ein wenig Wasser dazugeben. Die Glasur auf dem Kuchen verteilen, an den Seiten hinunterlaufen lassen und zum Schluss mit Kokosraspel und/oder fein geriebener Limettenschale bestreuen.
